Where science meets coffee, the Fazenda Pântano farm situated in Cerrado, Brazil will delight individuals that enjoy a refined cup of coffee. Delicately complex, flavours of dried fruit and swiss chocolate with hints of wine dominate.

The Cerrado is a vast tropical savanna ecoregion and the highlands of Brazil that’s composed of contrasting mosaic habitats, infinite waterways, cave systems, ancient trees and vegetation are a safe-haven for the native wildlife found inhabiting the region form South America’s richest biome.

Persistent rainfall combined with tropical temperatures and Cerrado’s mineral rich absorbent soil give farmers the opportunity to nurture and refine specialty arabica coffee varieties. Located at 1200m, the Fazenda Pântano farm experiments with over 240 varieties of arabica on over 500 hectares of land of which more than half has been dedicated to preserving the natural flora and fauna of the rainforest and works closely with the Brazilian Coffee Research Institute. Wagner Ferrero has garnered a reputation for his wisdom and fastidious approach to managing his coffee farms, exploiting the latest technology and cultivation practices to produce an iconic and sustainable yellow bourbon coffee cherry.

Only when the cherries match Mr. Ferrero’s rigorous criteria can they be hand-picked and then naturally processed on-site and dried on raised beds.

A delicately complex flavour emerges of dried fruit and swiss chocolate with hints of wine. The acidity is barely noticeable but present leaving an elegantly smooth and creamy finish.

A medium roasting profile makes for a constructive espresso blend. As an espresso, the hazelnut tone rings in harmony with its intense chocolate personality. The yellow bourbon retains its sweet structure, gentle acidity and smoothness but transitions into a nut-toned finish supported by woody aromatics.

Darker roasts are best served either straight up as an espresso or drip-brewing the coffee for a surreal chocolate milkshake taste that’s absolutely refreshing.
