The complex geography is unique, chains of mountains, steep canyons and volcanoes dominate the region, cloud forests, an array of protected forests and jungles that are home to protected plant and animal species such as the revered resplendent quetzals, serene lakes, rivers, and waterfalls.
Our El Jaguar specialty coffee is Strictly High Grown by a group of small producers located in the township of Siltepec that still use traditional farming practices.
The township is situated on the mountainous terrains of the Sierra Madre de Chiapas, overshadowed by the Tacana Volcano to the east and is within the Biosphere El Triunfo, a protected UNESCO natural reserve home to the cloud forests of Mexico and endangered animals native to Central America and an abundance of flora species.
Although Siltepec sits on the Tropical Belt, the mountainous rainforest terrain affords the area with a favourable microclimate and volcanic rich soils similar to their Guatemalan siblings. The rainforest provides adequate shade for coffee cherries to mature, which are then de-pulped, fermented washed and sundried on raised beds.

At a medium roast expect flavoursome notes of cherry and sparkling orange whilst a dark roast will give hints of Nutella, and a caramel sweetness.
We also noticed an uplifting spiced aroma floating around when brewed to add further credibility to this wonderful coffee.
